– Place an egg yolk, 1 Tbsp lemon juice and 2 Tbsp mustard powder in a bowl of a food processor until mix is thick.
– While processor is still running add 1 cup light olive oil in a thin steady stream until creamy. Place in another bowl.
– Add 2 Tbsp thinly chopped capers, 6 baby gherkins, 2 finely chopped shallots, 1 Tbsp parsley, 1 Tbsp dill, 2 Tbsp chives and stir together.
– Season with S & P.
